Generations of Americans have adored the Formosa Oolong style of brown oolong, particularly for its toasty flavor. The traditional method of tea production in Taiwan involves the stems, so there's no need to worry about them. Formosa Oolong was immensely popular in the US for several decades. In the mid-nineteenth century, a British entrepreneur named John Dodd developed this variety, which is oxidized to around 75%, making it darker than most other oolongs.

The quality of the water used to brew tea is crucial. Use filtered water as needed, and for each cup of tea, use one teaspoon of leaves. Pour 205°F water over the tea and steep for 4 to 5 minutes, then remove the tea leaves. Sit back and savor the moment.
